  • Introducing our very special Christmas limited release.

     

    This beautiful digestivo celebrates the green walnut, harvested specifically in July when they are full-size but unripe, before the nut’s inner shell hardens.

     

    This year we sourced over 50kg from both the garden of chef Mark Poynton’s latest restaurant venture Ancient Shepherds (just up the road in Cambridge), and the garden of England, Kent, from the brilliant Potash Farm.

     

    These are prepared simply, cut in half or quartered and macerated in full strength grain spirit for several months. We deliberately macerate in an oversized tank so there is plenty of space for oxygen which helps the green walnuts form juglone, which gives it that unique almost black colour.

     

    The resulting flavours that develop are incredibly unique and  complex, and that is what makes Nocino so special. Bittersweet, earthy, spicy and citrusy – all in perfect harmony.

     

    We’ve complimented this with an infusion of locally grown fig leaves and a little vanilla before sweetening generously. After all, it is (almost) Christmas!

     

    Finally the finished Nocino is rested for a further month in stainless steel before bottling. The result is a rich, indulgent after dinner sipper. Bittersweet and warm-spiced with notes of dark chocolate, walnut, coffee, cinnamon, citrus zest and vanilla; all coming from just three incredible ingredients.

     

    A stunning treat for Christmas Day to share with friends and family, perfect with minced pies, blue cheese or of course Christmas pudding.
