Our Story

Vault Aperitivo is an independent modern distillery specialising in English wine based vermouth, amari and botanical spirits, championing the moment of the aperitif, inspired by multiple trips across Europe and a love for aperitivo culture.

 

It all began with a dream to make beautiful drinks with best-in-class ingredients - wild, foraged or sourced from top producers. Celebrating the art of aperitivo and bringing it to the forefront of British dining, where it should be.

 

Founded by Sharon and Dan Joines in 2017, starting life in the vault under their stairs at home, Vault moved and officially launched in Sorella, a cosy neighbourhood Italian restaurant in Clapham which Dan co-founded in 2018.​​

 

By 2023, Dan decided it was time to focus on Vault fully, settling into a new warehouse space in the heart of Saffron Walden, just south of Cambridge, and next door to neighbourhood favourite, Chater's.​

 

Today you can find Vault all across the UK, poured and stocked in the finest restaurants, bars, hotels and bottle shops. Alongside our core range of vermouths, amari and botanical spirits, we also develop bespoke spirits and vermouths for some of the leading restaurants and operators in the country.
